I suspect that one of Shan-Wei’s terraforming jobs was to determine what locally produced foods either were already or could be tweaked to be edible and tasty. Thereby increasing the food options and decreasing the possibility of failure due to the loss of a limited (terran) food resource due to failure to adapt or a disease.

I imagine that the draft dragon might be very tough!!

The mobile kitchens for Green Valley's winter march were serving up soups and stews, perfect for tougher cuts of meat.

For that matter, we know that pressure cookers are part of Safehold's kitchens, and that would be a good way to cook something like a "retired" draft dragon.
