They reacted aggressively to Shaylar, even the
Transport-Battle cross who was usually co-operative.
An attempt by a healthy Voice to control a dragon's mind,
might find that the dragon's mind was stronger! :o

We know that attack dragons don't react well to
a Voice, so could talent be used offensivly against
them? If they cant be controlled, they could
be a greater danger to their side than to the enemy.

It could be that telepathy causes battle dragons pain unless the Voice knows how to "shape?" his communication to fit the dragon. So Voices concentrating on dragons' minds with a sufficiently strong Talent or a sufficient number of Voices targeting one dragon may cause dragons to run amok. Perhaps only make them very hard to control and therefore less effective.

I suspect control would be possible once the battle dragons minds are properly "mapped" and communication is established.

A disciplined and controlled dragon would attack and retreat depending on the battle conditions, but a rogue dragon might simply go all out and be easily taken out by enemy fire. Also, such large predatory creatures, I wonder if they would devolve into attacking each other in the heat of battle with blood in the air.
We kno that some talents are aimed at the world around them or involve sensory information. So not just a voice could affect a dragon.
Imagine if they were able to make them think that the arcanan forces are the target instead.

You are dealing with a hostile and alien mind. I don't know how effectively a voice could interfere with a dragon even if they thought to try.

A weapon is only useful as long as you can control or influence it, if something interferes, it becomes a threat.

The trouble with this would be a threat to whom... That it could be a threat to its Arcanan handlers doesn't neccessarily give the Sharonian enemy a pass. It instead becomes a wildcard, the introduction of chaos...

The Sharonans don't need a pass, since they haven't got one now. Any diversion of dragon attention at all is a plus for them, since it reduces the effectiveness of any attack. And while ineffective is wonderful, less effective is still good when the idea is to ruin your day.
